Roasted Cauliflower w/ Turmeric and Herbs

A simple and delicious dish for winding down and leaning into autumnal comfort. Our October playlist pairs perfectly for some kitchen jams.

Ingredients (4 servings):

- 1 large cauliflower

- 3-4 tablespoons extra virgin olive oil

- 1 tsp turmeric powder

- 1/4 tsp paprika

- 1/4 tsp garlic powder

- 4-5 sage leaves

- 3 sprigs of thyme (stripped)

- 1/4 tsp salt (to taste)

Instructions

  1. Preheat your oven to 360 degrees F (in static mode).  
  2. Clean your cauliflower by getting rid of the leaves while keeping the stem.
  3. Slice your cauliflower to ½ inch thick and eliminate only the hard stem tip.
  4. In a mixing bowl, stir together the olive oil, turmeric, paprika, and garlic powder. 
  5. Chop and combine your sage and thyme.  
  6. Lay your cauliflower steaks on a baking sheet lined with parchment paper.  
  7. With the help of a brush, coat the cauliflower on all sides while adding the salt. 
  8. Sprinkle your veggies with the chopped herbs. 

Cook for around 40 minutes at 360 degrees F in a static oven. Check for doneness with a fork to ensure they are soft in the middle. Add a few extra minutes if necessary. Enjoy!
